HOW FRESH WILL MY CAKE BE?My cakes are baked and decorated to order from premium ingredients using from scratch recipes (that is butter, sugar, flour and egg). I would never use a packet mix, freeze cakes nor a recipe that is not tested, to ensure you are receiving a cake that tastes as good as it looks! Baking a cake is usually a 2/3 day process - one day to prep decorations, one day to bake and prep fillings and one day to assemble and decorate. Again depends on the cake design, size and requirements. My kitchen is usually at it’s busiest on a Thursday and Friday prepping for weekend cake deliveries, however I can bake, prep and deliver all week.

WHAT FOOD STANDARDS DO YOU HAVE?I am fully insured, my kitchen is council approved and I have my Food Safety Supervisor Certificate. All equipment and surfaces are cleaned and sanitised regularly with protocols followed.
-
HOW FAR IN ADVANCE DO I NEED TO ORDER?Ideally a 3-4 week notice period is required, especially for larger and more detailed cakes/cupcakes. Where possible short notice orders will be accommodated.
-
I HAVE SPECIAL DIETARY REQUIREMENTSSome of my cakes and cupcakes can be baked gluten and nut free (stated on menu). However whilst every effort will be made to ensure the cakes or cupcakes are free from these allergens (washing and sterilising) where stated I cannot legally claim or 100% guarantee that there will be no trace or cross contamination since other recipes in my kitchen will use these ingredients. If your dietary requirements are strict then unfortunately I am not the correct baker for you.

HOW DO I CARE FOR MY CAKE OR CUPCAKES?Along with you cake or cupcakes will be some care instructions detailing anything that is not edible, how the cake is supported (if required), recommended transport and storage and what to do with any left overs. Here are some general instructions: 1. Transport Pick up and carry the box from the bottom only. Never from the top or sides. Keep the box level at all times - during transport, refrigeration and display. Place the box in an air conditioned vehicle away from loose objects. Drive slowly avoiding sudden stops and turns. The best place is the passenger footwell. A non-slip mat is an added security too. 2. Storage Most cakes or cupcakes should be stored in the fridge (advise will be given at delivery) . Keep away from direct sunlight, moisture and heat when not in the fridge. Take the cake or cupcakes out to display around 1 hour before serving and best served at room temperature. If using a stand use a sturdy one at least an inch larger than the cake board. 3. Leftovers Store any leftover cake or cupcakes in the fridge in an air tight container. Remove around 1 hour before serving. Alternatively any leftovers can be sliced, wrapped and frozen for up to 3 months in an air tight container. All ingredients are fresh. If something can not be frozen advise will be given at delivery.

WHAT ARE THE PAYMENT TERMS?An invoice will be sent direct to the client upon ordering for a 50% deposit to be paid to secure the date and pre order ingredients, decorations etc. The balance is due 48hrs before delivery. The recipient takes full responsibility of the cake or cupcakes once delivered/collected. Cancellation by the Client: If a cancellation is made by the client before 7 days prior to delivery a full refund of the 50% deposit will be issued minus any out of pocket bespoke items that may have already been ordered ie. personalised toppers etc. and my time in planning. After 7 days but before 48hrs prior to delivery the 50% deposit will not be refunded. After 48hrs prior to delivery the balance is due and no refund will be issued as the baking and decorating will have commenced and the cake/cupcakes will be provided. Cancellation by Cake & Layer: In the unfortunate circumstances that Cake & Layer should need to cancel an order we will endeavour to find an alternate solution and if that cannot be met a full refund of payments to date will be issued.
